Ok, it seems like every week there’s a new diet fad or cleanse or allergy that everyone is supposed to latch onto. When it comes to my food and eating habits, I am very selective of what I follow. Lately (for the past few years) all I’ve been hearing about is Gluten this and Gluten that. So what is Gluten? Why are some people allergic to Gluten? Is it bad?
So let’s do a little digging….
Gluten is “a substance present in cereal grains, especially wheat, that is responsible for the elastic texture of dough. A mixture of two proteins, it causes illness in people with celiac disease.”
OK so then what is Celiac Disease? A disease in which the small intestine is hypersensitive to gluten, leading to difficulty in digesting food. This might sound like a horrible disease to have, but thanks to modern science and technology..there are sooooo many options for those with Gluten allergies. Walk down any isle of your local grocery store and you will find plenty of foods that are gluten-free…and companies are adding more gluten-free options to their inventory daily!
